Chenin Blanc

The grapes are pressed whole cluster and the juice settles for 48 hours before being moved to a mixture of neutral oak and second use puncheons for primary and secondary fermentation. The wine is aged on heavy lees for 6 months, then racked and aged an additional 12 months on fine lees before being bottled unfiltered. 100% native yeast, and the only addition was S02.

The vineyards were planted about 120 years ago to Zinfandel & Cabernet Pfeffer and over the years expanded to include a handful of other varietals. The Chenin Blanc was planted in the late 90s and sits on the north side of the creek on sandy alluvial soils.

Bottled unfiltered.

Our first bottling of stand alone Chenin Blanc

As is the case with many good things, the wine takes time to develop but the final product is well worth the wait. Slow Ready is an ode to the time it takes to reach its full potential.
