The fruit is pressed whole cluster to stainless steel where it settles for 48 hours before being moved to neutral French oak for primary and secondary fermentation. The wine spends between 10 and 12 months on heavy lees before being racked and bottled. Small addition of S02 before bottling (<40ppm total.)

Petaluma Gap Pinot Noir

One of our early explorations into the Petaluma Gap AVA, this windswept region offers a rich history of exceptional grape growing, yet remains somewhat underrecognized for the quality it consistently delivers. The vineyards here respond best to a gentle hand, yielding wines with lower alcohol, refined structure, and ethereal aromatics.
