Sparkling Albariño

Direct pressed and allowed to settle for 48 hours before racking for clarity, then returned to a single stainless steel tank for primary fermentation. Élevage continued in bottle for eight months prior to labeling and release in April 2025. Fermented with 100% native yeast and bottled without disgorgement.

These are younger vines, around 13 years old, that sit on ancient cobbly soils deep in the Borden Hills AVA. The site is quite warm during the day but is assisted by a cooling afternoon wind that helps extend the maturation process, and preserves acidity.

Bottled end of Feb 2024, non-disgorged.

Bright, high-acid and effortlessly vibrant.



Serve: 40-45°F, we like our bubbles cold.
